Chef Vincenzo Belvito began a culinary career in Italy in the '80s that took him
to Monte Carlo, the American Southwest (including The Mansion on Turtle
Creek), , and finally to Washington where he was Executive Chef at La Tomate
and I Matti before undertaking the restoration of the Mrs. Simpson's space to
his own Pesto Ristorante in late 2002
